For this recipe, I like to use sprouted quinoa flour but you can use regular quinoa flour too! They are hearty and delicious!
1 cup quinoa flour
1 tsp baking powder
1/2 tsp baking soda (make sure it is aluminum-free)
3/4 cup almond milk (I make my own)
1/4 cup water
2 pasture raised or organic eggs
2 tsp coconut oil
Mix all ingredients and cook in a greased skillet (I use coconut oil). You can add blueberries, nuts, bananas or other fruit as desired. Top with pasture butter and maple syrup. I use Grade B maple syrup. Enjoy!
